Delicious: It's What's For Dinner


After a day spent in the garden: dinner.

Baby spinach, roasted baby golden beets, pink grapefruit, honey goat cheese, pecans toasted with butter and honey and dressed with juice from the grapefruit, olive oli and garden mint.

Oh Baby.

  4. Yum, yum, and yum! Awesome combination of ingredients. Pecans make everything better, especially when they are toasted with butter. Whee!

  5. Looks very nice - and ever so healthy! Baby spinach always reminds me of fellow-allotmenteer Eddie the Poisoner, who used to say (lugubriously, as was his style) about lettuce that it used up more calories to eat it than it provided.....

  6. ...and here I was hoping that was roasted butternut squash. I don't do beets. They taste like dirt to me. Aside from that, did you grow them yourself? My spinach and mint is going strong so I could make something similar with a lemon vineagarette. The arugula is already just starting to go to seed. I also have chive blossums that I don't know what to do with.
